  1. Old-Fashioned Potato Soup

  3. 2 stalks celery (chopped)
  4. 1 medium onion (chopped)
  5. 2 Tbls. vegetable oil
  6. 6 medium potatoes (cubed)
  7. 2 carrots (sliced)
  8. 3 cups water
  9. 5 chicken bouillon cubes
  10. 3/4 tsp. salt
  11. 1/2 tsp. thyme
  12. 1 tsp. crushed rosemary
  13. Dash garlic powder
  14. Dash pepper
  15. 2 cups milk
  16. 1 cup shredded Cheddar cheese
  17.  
  18. SautΘ celery and onion in vegetable oil in a large kettle
  19. until tender. Add the next nine ingredients. Cover and
  20. simmer about 20 minutes or until vegetables are tender.
  21. Remove from heat and mash with potato masher slightly. Add
  22. milk and cheese. Cook, stirring constantly until cheese is
  23. melted; do not let soup boil. Serve immediately.
